We roast to the morning, not the calendar
Every September someone asks when the pumpkin drinks start. The answer is never, and it is not a stunt.
We roast what Number Nine gives us that day and we write it on the board. Some mornings that is a bright washed Ethiopian, some mornings it is a darker Sumatra with a finish like wet bark. We do not decide in August what October should taste like.
A season is not a flavor. It is just weather, and weather we already account for, because the roaster does. If you want something that tastes like a candle, there are places for that, and we wish them well.
What is on the bar today is on the board today. That is the whole menu, and it is enough.
I ask about the pumpkin one every year and every year the answer is the same. I have come to respect it.
